The PERFECT Vegan Blueberry Muffin

Prep Time: 45 minutes, including 20 minutes baking time


I'm not exaggerating. These are perfect muffins. Super moist and tasty. The hint of lemon goes a long way and the glaze is a perfect addition without making the muffins too sweet. I usually distribute my baked goods to the neighbors, we're a close-knit community. This recipe got a really great response with multiple requests for extra batches.


Just know, it's okay if the batter is thick, don't think you did something wrong. It all evens out during baking.


Also, if you'd prefer to leave the glaze off, they're totally great without it. You're choice.

The PERFECT Vegan Blueberry Muffins


Ingredients:

For Muffins:

  • 1.5 cups, AP flour

  • 3/4 cups, granulated sugar

  • 1/2 tsp., salt

  • 2 tsp., baking powder

  • 1 tsp., fresh lemon peel

  • 1/3 cup, vegan milk (I use oat milk)

  • 1 portion, flax meal egg substitute

  • 1 cup, frozen blueberries

For Glaze:

  • 1/2 cup, powdered sugar

  • 1 tsp, vanilla extract

  • 1-2 TBSP, vegan milk

Procedure:

For Muffins:

  1. Preheat oven to 350º F.

  2. Make flax meal egg substitute by mixing 1 TBSP of flax meal with 2.5 TBSP of warm water. Let sit for 5 minutes before using.

  3. In a large bowl, sift in flour, sugar, salt, and baking powder. Mix with fork.

  4. Mix in lemon peel.

  5. Add wet ingredients and mix well to create a thick batter.

  6. Use a spatula to fold in blueberries. *Don't over mix or entire batter will turn purple.

  7. Place muffin liners in muffin tin and fill 3/4 of the way full. If you have left over batter, distribute evenly until gone.

  8. Bake for approximately 20 minutes. Do toothpick test to make sure muffins are completely baked.

  9. Cool on wire rack.

For Glaze:

  1. In medium mixing bowl, sift powder sugar.

  2. Add vanilla extract and 1 TBSP of vegan milk,

  3. Stir until thoroughly combined. If the mixture is thick, add drops of additional vegan milk and stir until desired consistency is achieved. Glaze should be able to coat the back of a spoon.

Finish:

  1. Make sure the muffins are cooled before adding glaze.

  2. Place wire rack on parchment paper lined oven tray. Place muffins on rack.

  3. Use a spoon to lightly drizzle glaze on top of muffins. Allow glaze to settle for at least 5 minutes before serving.
