I found a similar recipe to this Vegan Apple Sauce Bread when I first started my vegan journey. I just came off a pretty intense month-long "detox" and could bring bread back into my diet, but still needed to avoid oils. This was a great solution for my sweet tooth. I'd treat myself to a slice of this bread on occasion and it really did the trick. My kids also loved it, which is a BIG plus.
This bread is super easy to make. It's pretty much a "dump" cake. Just mix the dry and wet ingredients then bake. This is one of those recipes that gets better overnight. So, your second serving might just be tastier than your first.
Vegan Apple Sauce Bread
1 cup, whole wheat flour
1 cup, AP flour
*note: using all AP flour is fine
½ cup, old fashioned oats (+ 1 TBSP for topping)
2 tsp., baking powder
½ tsp., baking soda
1/2 tsp., salt
1 TBSP., cinnamon
1 tsp., cardamom
1.5 tsp., vanilla extract
1 ½ cups applesauce (unsweetened)
½ cup maple syrup
⅓ cup vegan milk (I use oat milk)
Preheat oven to 375º F.
In a large mixing bowl, sift together both flours, baking powder, baking soda, salt, cinnamon, & cardamom.
Use a fork to mix in the oats.
In smaller bowl, combine applesauce, maple syrup, and vegan milk. Mix well with fork.
Pour wet ingredients into large mixing bowl with dry ingredients. Thoroughly mix with an electric mixer or fork.
Line a loaf pan (9"x5") or round cake pan (8" or 9") with parchment paper. Pour batter into pan.
Sprinkle 1 TBSP of oats to cover the top of batter.
Bake for 45 mins - 60 mins, depending on your oven. *Use a toothpick to ensure it's baked in center before cooling.
Let the bread sit in the pan for 5-10 minutes before transferring to a wire rack. Cool for an additional 10 minutes before serving.
Wrap airtight and store at room temp or in the fridge.
