Vegan Pumpkin Spice Overnight Oats

Overnight oats is one of my favorite healthy breakfast/snack solutions. I include it in the "snack" category because when you make a large batch, there's plenty to use for your midday fix.

This specific recipe includes pumpkin purée and pumpkin spice, giving it a winter vibe - but this nutritious recipe is great all year round.

Vegan Pumpkin Spice Overnight Oats


  • 2.5 cups, old fashion oats

  • 1/4 cup, ground flax meal (ground flax seeds)

  • 1 cup, pumpkin purée 1 TBSP pumpkin spice seasoning

  • 1 tsp, agave or maple syrup

  • 1/2 cup pumpkin seeds

  • 1/2 cup dried cranberries

  • 2 cups, vegan milk (I use coconut or oat milk)


  • Thoroughly mix all ingredients in medium-large bowl, then place in a sealable container (like a mason jar w/ lid).

  • Refrigerate overnight and enjoy.

  • *Use an airtight seal, especially if you'd like to store the oats longer than 24 hours. If sealed and refrigerated properly, the oats should hold for up to 5 days max.
